Glazed Key Lime Snack Cake

  1. Put the gelatin mix into a small bowl. Stir in a little bit of cold water (a few tablespoons or as needed to create a paste) and let it soak for 3-5 minutes. It will look like a thick paste.
  2. Preheat oven to 350 F.
  3. Combine sugar, flour, salt, baking powder, baking soda, and gelatin in a mixing bowl. Add eggs, oil, orange juice, vanilla and lemon juice. Mix until combined.
  4. Pour batter into a greased 9" x 13" pan and bake at 350 F for 30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 15 minutes. While it's cooling combine the glaze ingredients in a small bowl.
  5. After 15 minutes, rick cake all over with a fork. Drizzle well with the lime glaze.
