Glazed Key Lime Snack Cake
- FOR THE CAKE:
- 1 package (3-oz Size) Lime Gelatin Mix
- 3 Tablespoons Cold Water Or As Much As Needed To Make A Paste Out Of The Gelatin Powder
- 1-1/2 cup Sugar
- 2 cups Flour, Sifted
- 1/2 teaspoons Salt
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 5 whole Eggs
- 1-1/3 cup Cooking Oil
- 3/4 cups Orange Juice
- 1/2 teaspoons Vanilla Extract
- 1/2 whole Lemon, Juiced
- FOR THE GLAZE:
- 1/3 cups Fresh Lime Juice
- 1 cup Powdered Sugar
- Put the gelatin mix into a small bowl. Stir in a little bit of cold water (a few tablespoons or as needed to create a paste) and let it soak for 3-5 minutes. It will look like a thick paste.
- Preheat oven to 350 F.
- Combine sugar, flour, salt, baking powder, baking soda, and gelatin in a mixing bowl. Add eggs, oil, orange juice, vanilla and lemon juice. Mix until combined.
- Pour batter into a greased 9" x 13" pan and bake at 350 F for 30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 15 minutes. While it's cooling combine the glaze ingredients in a small bowl.
- After 15 minutes, rick cake all over with a fork. Drizzle well with the lime glaze.
