Potato Skillet Saute
- 1 Tablespoon Olive Oil, Or More As Needed
- 4 whole Medium Sized Red Potatoes, Cut Into Small Cubes
- 1 whole Small Yellow Onion, Chopped
- 1 whole Carrot, Sliced Into Half Moons
- 1 whole Yellow Squash, Chopped
- 1/2 bunches Spinach, Chopped
- 1/2 teaspoons Salt, Or To Taste
- 1/4 teaspoons Fresh Ground Pepper, Or To Taste
- 2 Tablespoons Fresh Herbs, Chopped (Rosemary, Thyme, Basil, Oregano)
- Heat olive oil in a large saute pan, about 1-2 tablespoons. Add potatoes and cook, stirring for about 10 minutes on medium. When browned and slightly soft, add in the onion, carrot, and squash. Saute for about 8 minutes, adding the spinach the last 2-3 minutes. If everything gets too dry, make a space to add a little more oil, then stir all together. Salt and pepper to taste.
- Time for the fresh herbs! Add those and cook a couple minutes more. Serve!
