Potato Soup – Simply Delicious
- 1/2 whole Onion, Diced
- 3 cloves Garlic, Chopped
- 1 Tablespoon Olive Oil
- 5 whole Golden Potatoes, Peeled And Cut Into Medium Cubes
- 2 cups Chicken Broth
- 1 teaspoon Herbes De Provence -- Rather Than Keeping Track Of All The Different Herbs, I'm Lazy So I Use This All-in-one Herb
- 2 teaspoons Salt
- 1 cup Sour Cream (fat-free Works Great)
- 1 teaspoon Fresh Dill, Chopped
- This recipe will make 4 servings of soup, if you're looking for a big-ol'-bowl for a main dish. Or it will make 6 smaller sized servings.
- 1. Saute chopped onions and garlic in olive oil.
- 2. Add potatoes, allow them to brown/cook for about 3-4 minutes.
- 3. Add chicken broth and then enough water to make sure that the potatoes are completely covered. Put the lid on and allow potatoes cook at a low boil for about 8-10 minutes (check them with a fork for doneness).
- Reduce the heat to low once the potatoes are done.
- 4. Using an immersion blender CAREFULLY puree up the soup. Did I mention that you should be CAREFUL when you do this cuz its HOT!!!!
- 5. After it's blended to your desired consistency (I like lumps in mine), add the dry herbs and salt. Simmer for about another 5 minutes, stirring periodically.
- 6. Just before serving, stir in the sour cream and chopped dill.
- I serve mine with shredded white cheddar on top as a garnish.
