Peanut Butter Chip Yogurt Cookies
- 1 cup Whole Wheat Pastry Flour
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1/2 cups Plain Greek Yogurt
- 1-1/2 teaspoon Stevia
- 3 Tablespoons Brown Sugar
- 1 whole Egg
- 1/2 teaspoons Vanilla Extract
- 1/2 cups Reese's Peanut Butter Chips
- Preheat oven to 375 F
- In a bowl add flour, baking soda and salt; set aside.
- In a large bowl add yogurt, stevia and brown sugar; mix until blended. Beat in eggs and vanilla extract, mix until smooth. Gradually add flour mixture until combined. Stir in peanut butter chips.
- Drop by well-rounded teaspoons onto ungreased cookie sheets. Bake 6-8 minutes until lightly golden brown then remove from oven.
- Leave cookies on the cookie sheet for about a minute and then place onto a cooling rack to finish cooling. I recommend storing in the refrigerator.
