Tortilla Soup
- 2 cans (14 1/2 oz. each) chicken or vegetable broth
- 1 can (14 1/2 oz.) chunky or diced tomatoes, salsa style, undrained
- 2 to 3 Tbsp. tabasco sauce
- 1 garlic clove, minced
- 1/2 tsp. ground cumin
- 1/4 tsp. chili powder
- shredded cheddar
- sour cream
- 2 lg. green onions, chopped
- 1/4 c. chopped fresh cilantro
- 1 Tbsp. lime juice
- tortilla chips
- Suggested variations: Add 1 c. cubed cooked chicken and 1 can (14 1/2 oz.) corn
- Combine broth, tomatoes (with liquid), 1 cup of water, tabasco sauce, garlic, cumin and chili powder in a soup pot.
- Bring to a boil.
- Reduce heat to low; cook uncovered 5 minutes.
- Stir in cilantro, green onions and lime juice.
