Southern Fried Okra

  1. Cover okra with buttermilk in a large bowl. Place in the fridge for 10 minutes (longer is okay).
  2. Meanwhile, heat oil to 375u0b0F in a Dutch oven or-yikes-a Fry Daddy! Does anyone other than me still own one?
  3. Mix dry ingredients in a small bowl. Remove okra from buttermilk. Dredge through cornmeal mix, shake off excess, and drop into hot oil. Fry okra in batches for about 3 minutes or until golden brown. Drain on paper towels.
  4. As I stated above, I use these as croutons for a salad; it makes me feel better about eating this southern fried okra!
