Carrot-Orange Cake
- 3 1/2 c. sifted flour
- 2 tsp. baking powder
- 1 tsp. soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 c. (1 stick) butter
- 3/4 c. packed brown sugar
- 3 eggs
- 3/4 c. orange juice
- 1 Tbsp. grated orange rind
- 2 c. finely shredded carrots
- 1 c. walnuts, chopped
- Cream Cheese Frosting
- Grease and flour a tube pan.
- Preheat oven to 350u0b0.
- Sift flour, baking powder, soda, salt, cinnamon and nutmeg.
- Beat butter, sugar and eggs in a large bowl at high speed for 3 minutes. Add flour alternately with juice, starting and ending with flour. Stir in rind, carrots and walnuts.
- Spoon batter into pan.
- Bake in a 350u0b0 oven for 45 minutes or until top springs back when pressed. Cool in pan on rack for 10 minutes.
