Banana Carrot Cake
- 2 whole Large Ripe Bananas, Mashed
- 1/3 cups Sugar
- 3/4 cups Unsweetened Natural Applesauce
- 2 whole Eggs
- 1 cup Flour (you Can Use Whole Wheat Or All-purpose)
- 1/2 teaspoons Salt
- 1 teaspoon Baking Powder
- 1-1/2 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- 1/2 teaspoons Nutmeg
- 1/4 teaspoons Cloves
- 1-1/2 cup Uncooked Quick Oats
- 1 cup Shredded Carrot
- 1/4 cups Chocolate Chips
- FOR THE GLAZE (optional):
- 1/4 cups Light Cream Cheese
- 2 Tablespoons Milk
- 2/3 cups Powdered Sugar
- Preheat oven to 350u0b0F.
- In the bowl of a stand mixer, mix together bananas, sugar, and applesauce, about 1 minute. Mix in eggs, one at a time. Once combined, add in all flour, salt, baking powder, baking soda, cinnamon, nutmeg, and cloves. Mix until batter is smooth.
- Stir in oats, shredded carrots, and chocolate chips.
- Pour batter into a greased 8x8 pyrex dish. Bake for 35 minutes.
- Prepare glaze by whisking cream cheese, milk, and powdered sugar. Add additional sugar if you would like it thicker, or additional milk if you would like a runny glaze. Pour it over the warm cake.
