Barbecue Chicken Salad W/Cilantro Ranch Dressing
- 3 whole Boneless, Skinless Chicken Breasts
- 1 bottle Favorite Barbecue Sauce (I Recommend KC Masterpiece Original)
- 2 heads Hearts Of Romaine
- 1 can Black Beans
- 1 can Corn
- 15 whole Grape Tomatoes, Sliced In 1/2
- 2 cups Mozzarella Cheese, Shredded
- 1 envelope Hidden Valley Ranch (prepared)
- 1 clove Garlic
- 2 Tablespoons Lime Juice
- 1/2 bunches Fresh Cilantro
- 1. Place chicken breasts in slow cooker, cover with barbecue sauce, and cook on low heat for 4 hours. Shred when done.
- 2. Once chicken is done, wash and chop hearts of romaine and place on a serving platter.
- 3. Top bed of romaine with black beans, corn, and sliced tomatoes.
- 4. Generously cover salad with shredded chicken and top with shredded Mozzarella.
- 5. Place prepared ranch dressing in a food processor along with garlic, lime juice, and cilantro. Puree.
- 6. Drizzle cilantro ranch dressing over salad and serve immediately!
