Barbecue Chicken Salad W/Cilantro Ranch Dressing

  1. 1. Place chicken breasts in slow cooker, cover with barbecue sauce, and cook on low heat for 4 hours. Shred when done.
  2. 2. Once chicken is done, wash and chop hearts of romaine and place on a serving platter.
  3. 3. Top bed of romaine with black beans, corn, and sliced tomatoes.
  4. 4. Generously cover salad with shredded chicken and top with shredded Mozzarella.
  5. 5. Place prepared ranch dressing in a food processor along with garlic, lime juice, and cilantro. Puree.
  6. 6. Drizzle cilantro ranch dressing over salad and serve immediately!
