Prune Crumb Bars
- 7 ounces, weight Pitted Prunes
- 1 cup Apple Juice
- 1 cup Packed Brown Sugar, Divided Use
- 1 cup All-purpose Flour
- 1 cup Whole Wheat Flour
- 1 teaspoon Cinnamon Powder
- 1/2 teaspoons Nutmeg Powder
- 1 cup Chopped Walnuts/almond
- 1 cup Melted Butter
- 1) Soak the prunes in the apple juice, preferably overnight in the fridge. If pressed for time 2 hours on the counter will do.
- 2) After soaking, pour the prune and all the juices into a pan over medium-high heat and let it come to a simmer. Add in 1/4 cups of brown sugar. Let the mix simmer for about 10 minutes, using your ladle to smash the prunes. The prunes will be very soft so they are mashable. Turn off the fire and let the jam cool.
- 3) To prepare the crumble, mix the flours, ground spices and remaining brown sugar in a large bowl. Stir in the butter and chopped walnuts. The mixture will be crumbly. Add more butter if you feel you need to.
- 4) Preheat the oven to 325F or 165C.
- 5) Press 1/2 of the crumble mixture into the base of a square 9x9 pan. Make sure you press it well.
- 6) Spread the prune jam over the crumble and press the remaining crumble on top of the jam. Make sure again that you press the crumble on properly to prevent air bubbles.
- 7) Bake for about 25 minutes, until the top lightly browns. Cool totally before slicing into bars. Small bars. They are very rich!
