Pulled Pork Tostada With Chipotle Caramelized Onions
- 2 Tablespoons Olive Oil
- 1 whole Medium Yellow Onion, Sliced
- 1/4 teaspoons Garlic Powder
- 1/4 teaspoons Chipotle Powder
- 1/4 teaspoons Salt
- 2 cups Cooked Pulled Pork
- 4 whole Tostada Shells
- 1 cup Guacamole
- 1/2 cups Sour Cream
- 1/4 cups Chopped Fresh Cilantro
- Heat olive oil in a skillet over medium heat.
- In a medium sized bowl toss onions with garlic powder, chipotle powder and salt. Add the mixture into the skillet and cook over medium-low heat until brown and caramelized. This will take about 20 minutes. Make sure to stir frequently. When they are done, transfer to a plate and set aside.
- In the same pan, cook the prepared pulled pork just until warmed through. Then remove the pan from the heat.
- Heat tostada shells according to package directions.
- To assemble one tostada spread guacamole on a tostada shell. Top with 1/4 of the pulled pork, 1/4 of the caramelized onions, a dollop of sour cream and a sprinkle of cilantro. Repeat with remaining ingredients. Serve.
