Quick And Easy Skillet Chowder
- 3 Tbsp. roasted garlic butter (Land O' Lakes)
- 2 Tbsp. oil
- 2 c. frozen potatoes O'Brien, thawed
- 1 (14 3/4 oz.) can cream style corn
- 1/4 c. cooked and crumbled bacon (or real bacon bits)
- 2 c. half & half
- 1/8 tsp. white pepper
- 1/4 tsp. paprika
- 1/2 tsp. salt
- 2 Tbsp. chopped fresh chives (or 1 Tbsp. dried)
- Cheese of choice, optional
- Heat garlic butter and oil in large skillet.
- I like to use my electric skillet for this. Add the potatoes and cook over medium heat, stirring constantly, until tender.
- This usually takes about 4 to 5 minutes.
- Add corn, bacon, half & half, white pepper, paprika, salt and chives.
- Continue cooking over low heat for about 5 minutes or until mixture is slightly thickened.
- If desired, sprinkle a little cheese over the top of each serving.
