Cranberry Stuffing For Turkey Or Chicken
- 1/2 lb. bacon, fried and crumbled
- 1 onion, chopped
- 2 c. chopped celery
- 3 cloves garlic, minced
- 2 c. cranberries
- 8 c. stale bread, cubed
- 2 tsp. garlic salt
- fresh ground pepper to taste
- 1/2 c. chopped walnuts
- 1/2 c. pine nuts
- 2 Tbsp. poultry seasoning
- 1 Tbsp. ground sage
- 2 Tbsp. fresh rosemary, chopped
- 1/2 c. chicken broth
- 1/4 to 1/2 c. orange juice
- 2 eggs
- Saute onion, garlic and celery in chicken broth until tender. In a large bowl, combine bread, crumbled bacon, sauteed onion mixture, cranberries, garlic salt, fresh ground pepper, herbs and spices and nuts.
- Toss to combine.
- Moisten with orange juice.
- Add 2 eggs; toss to thoroughly combine.
- Stuff into cavity of turkey, packing lightly, or spread stuffing in a baking pan prepared with nonstick cooking spray.
- Bake at 325u0b0 for 30 minutes.
