Quick And Healthy Pizza Soup
- 15 ounces, weight Jar Or Can Of Pizza Sauce (any Small One Will Do)
- 4 cups Low Sodium Chicken Broth
- 1/2 teaspoons Oregano
- 1/4 teaspoons Garlic Powder
- 2 cups Chopped Fresh Greens (kale, Chard, Spinach), Tough Stems Removed
- 1 cup Diced Carrot (about 1 Large)
- 2 ounces, weight Quartered Pepperoni Slices, Cooked Sausage, Or Ham
- 1/4 cups Uncooked Quinoa, Rinsed
- 1 cup Freshly Shredded Parmesan Or Pecorino-Romano Cheese
- Combine all ingredients (except for cheese) into a medium saucepan and bring to a low boil. Reduce heat to low and simmer for 15 minutes until the quinoa is cooked and the carrots are tender.
- Ladle into bowls and top with a few pinches of shredded cheese.
- Serves about 4 adults or 6-8 small children.
- Nat's Notes:
- 1. Try to use uncured meat, if possible.
- 2. If you don't have pizza sauce, substitute a large can of tomato sauce (15 oz. or so) and a teaspoon of Italian seasoning.
