Quick And Healthy Pizza Soup

  1. Combine all ingredients (except for cheese) into a medium saucepan and bring to a low boil. Reduce heat to low and simmer for 15 minutes until the quinoa is cooked and the carrots are tender.
  2. Ladle into bowls and top with a few pinches of shredded cheese.
  3. Serves about 4 adults or 6-8 small children.
  4. Nat's Notes:
  5. 1. Try to use uncured meat, if possible.
  6. 2. If you don't have pizza sauce, substitute a large can of tomato sauce (15 oz. or so) and a teaspoon of Italian seasoning.
