Luscious Strawberry Salad

  1. The saddest period in my life was when I was vegan and I couldn't eat this.
  2. Dissolve the Jell-O in the boiling water. Add the strawberries (undrained) and stir gently. Chill until slightly thickened. Stir in pineapple (drained) and the pecans. Pour 2 cups of the mixture into a 9 x 13 dish. Chill in fridge. Fold sour cream into remaining mixture and pour over the partially set Jell-O. Chill until firmly set.
  3. Instead of pouring into a Pyrex dish, you could divide it between 8 custard cups. Alternatively, you could cut it into little tiny squares and serve it in little tiny cups. You might just want to eat it out of the pan with a spoon, like I do.
  4. Top with Cool Whip if you dare!
  5. I love you, Mom, for a lot of reasons. I really love you for making this for every potluck and family function. I'm so glad you didn't make me eat things like green bean casserole and potato salad. You and your recipe rock!
