Fancy Potato Salad
- 2 whole Purple Potatoes, Diced
- 2 whole Yukon Gold Potatoes, Diced
- 2 whole Red Skin Potatoes, Diced
- 1 whole Sweet Potato, Peeled
- 8 ounces, fluid Fresh Green Beans, Trimmed
- 1/2 whole Red Onion, Minced
- 1/4 whole Red Bell Pepper, Diced
- 1/4 whole Yellow Bell Pepper, Diced
- 1/2 cups Sour Cream
- 1/2 cups Mayonnaise
- 1/4 cups Dijon Mustard
- 1 teaspoon Tarragon
- 1/2 teaspoons Cayenne Pepper
- 1 Tablespoon White Vinegar
- 1 teaspoon Sugar
- 2 teaspoons Salt
- 1 teaspoon Pepper
- 1/2 cups Bacon Bits
- 1. Boil potatoes until fork tender. Rinse in cold water until cool.
- 2. Blanch green beans for 7 minutes. Drop into ice water to stop the cooking.
- 3. Sour Cream, mayo and next 6 ingredients. Taste for seasoning. Adjust.
- 4. Add to potatoes with green beans, onion, bell pepper and bacon bits. Taste for seasoning.
