Black And White Cheesecake
- 2 cups Chocolate Cookie Wafers
- 1 stick Butter, Melted
- 3 packages Cream Cheese (8 Oz. Softened)
- 1 cup Sugar
- 3 whole Eggs At Room Temperature
- 1 cup Sour Cream
- 1 teaspoon Pure Vanilla Extract
- 1/2 teaspoons Almond Extract
- 1 carton Fresh Raspberries
- 1 cup Semi-Sweet Chocolate Chips
- 2 Tablespoons Butter
- Preheat oven to 350 degrees
- 1) For crust: you will need a spring form pan that has been sprayed with cooking release (Pam).
- 2) Crush chocolate wafers in food processor until fine.
- 3) Melt 1 stick butter and add to crushed wafer cookies. Mix together and pat to bottom of the spring form pan.
- Place in refrigerator while mixing filling.
- 4)For Filling: In mixer, beat cream cheese until smooth. Add sugar and continue to beat for 1 minute
- 5) Add one egg at a time,beating until incorporated before adding the next egg.
- 6) Add sour cream,vanilla extract and almond extract. Beat until incorporated,about 2 minutes.
- 7)Pour filling into prepared spring form pan.
- 8) Bake in a preheated 350 degree oven for 45 minutes or until set.
- 9) Remove from oven and cool for 30 minutes before placing in refrigerator to continue cooling. Cheesecake should cool at least 2 hours before serving.
- 10) For Chocolate Sauce: melt chocolate chips and butter gently in a microwavable dish for 45 seconds. Stir until smooth and butter and chips are melted.
- 11) Garnish each slice with a spoonful of chocolate sauce and fresh raspberries.
