Glazed Muffin Bites
- FOR THE MUFFINS:
- 1/4 cups Butter, Softened
- 1/4 cups Vegetable Oil
- 1/2 cups Sugar
- 1/3 cups Brown Sugar
- 2 Eggs
- 1 teaspoon Vanilla
- 1/4 teaspoons Baking Soda
- 1-1/2 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 3/4 teaspoons Nutmeg
- 2-3/4 cups Flour
- 1 cup Milk
- FOR THE GLAZE:
- 3 Tablespoons Butter, Melted
- 1 cup Powdered Sugar
- 3/4 teaspoons Vanilla
- 2 Tablespoons Hot Water
- In a large bowl combine butter, oil, sugar and brown sugar, and mix well. Add eggs and vanilla and mix well. Add baking soda, baking powder, cinnamon and nutmeg, and stir until well incorporated. Add flour alternately with milk, mixing until well combined.
- Heat your cake pop maker according to manufacturer's instructions (see note below if you don't have a cake pop maker) then add spoonfuls of dough to each well. Cook according to manufacturer's instructions (about 4 minutes). Remove balls from cake pop maker, and continue with another round, until dough is all cooked.
- Prepare glaze by mixing together butter, powdered sugar, vanilla, and water in a small bowl until smooth. Dip cooked muffin bites into glaze and set them on a plate or a sheet of parchment paper and allow to cool. If desired, dip a second time.
- Note: If you do not have a cake pop maker, you can bake these as muffins. Cook regular-sized muffins for 15-17 minutes at 400 F, or mini muffins for 12-15 minutes at 375 F.
