Green Pepper Jelly
- 1 cup Cleaned And Cored Green Peppers
- 1 Tablespoon Tabasco
- 1-1/2 cup Cider Vinegar
- 6-1/2 cups Sugar
- 1 box Certo, 6 Ounce Box
- 1 drop Green Food Coloring
- 6 whole Half-pint Canning Jars, Lids And Rings
- In a blender place peppers, Tabasco, and vinegar. Blend thoroughly.
- In a 6 quart saucepan combine pepper mixture and sugar. Bring to a rapid rolling boil that cannot be stirred down. Remove from heat for 10 minutes. Stir in Certo and food coloring. I add 1 drop for a more 'natural' looking green jelly, but you could add up to 3 drops for more of a Christmas presentation.
- Seal in hot sterilized jars for 10 minutes.
- Makes 6 half pint jars. Perfect for gift giving.
- Spread crackers with cream cheese and then green pepper jelly. For a fancier presentation, lay one whole brick of cream cheese on a dish, then pour jelly over the top with crackers on the side.
- Also delicious on scrambled eggs and I even used this jelly as a condiment for my roasted pork loin! Yum!!
