Green Pepper Jelly

  1. In a blender place peppers, Tabasco, and vinegar. Blend thoroughly.
  2. In a 6 quart saucepan combine pepper mixture and sugar. Bring to a rapid rolling boil that cannot be stirred down. Remove from heat for 10 minutes. Stir in Certo and food coloring. I add 1 drop for a more 'natural' looking green jelly, but you could add up to 3 drops for more of a Christmas presentation.
  3. Seal in hot sterilized jars for 10 minutes.
  4. Makes 6 half pint jars. Perfect for gift giving.
  5. Spread crackers with cream cheese and then green pepper jelly. For a fancier presentation, lay one whole brick of cream cheese on a dish, then pour jelly over the top with crackers on the side.
  6. Also delicious on scrambled eggs and I even used this jelly as a condiment for my roasted pork loin! Yum!!
