Banana Oat-Nut Muffins
- FOR THE MUFFINS:
- 2 cups Wheat Flour
- 2/3 cups Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1-1/2 cup Old Fashioned Oats
- 1 cup Milk
- 1/2 cups Canola Oil
- 2 whole Eggs
- 1 teaspoon Vanilla
- 2 whole Ripe Bananas
- 1/2 cups Crushed Walnuts

- FOR THE TOPPING:
- 1 teaspoon Unsalted Butter
- 1 Tablespoon Dark Brown Sugar
- 2/3 cups Finely Chopped Walnuts
- Heat oven to 375F and lighty spray a 12-count muffin pan.
- For the walnut topping: Combine melted butter, brown sugar, and walnuts and set aside
- For the muffins: In a separate large bowl, combine flour, sugar, baking powder and soda, and salt, mix. Stir in oats. Set aside.
- In electric mixer on medium speed combine milk, oil, eggs, vanilla, walnuts, and bananas till there are no lumps. Make a well in the flour bowl mixture and add wet ingredients. Stir till just barely combined (don't over mix or you will make 'em tough).
- Scoop batter evenly into 12 muffin cups and sprinkle with walnut topping. Bake 25 minutes.
