Potato Chip Brownies
- 3/4 cups All-purpose Flour
- 1 Tablespoon Cocoa Powder
- 1/4 teaspoons Salt
- 1 stick Butter, Unsalted
- 5 ounces, weight Good Quality Chocolate Bar, Chopped
- 3/4 cups White Sugar
- 1/4 cups Light Brown Sugar
- 3 Large Eggs
- 1 teaspoon Vanilla Extract
- 3/4 cups Chocolate Chips
- 2 cups Salted Potato Chips
- Preheat the oven to 350 F. Grease an 8x8 inch baking pan with butter and line it with parchment paper. Set pan aside.
- In a medium-sized bowl, sift the flour, cocoa and salt and set aside.
- Melt the butter in a large saucepan over a low heat. Once butter is melted add the chopped chocolate bar and stir with a whisk until well combined. Next add the sugars and stir well until combined, heating for about 3 minutes. Remove pan from the heat and let the mixture cool for about 5 minutes.
- Whisk the eggs and vanilla into the chocolate mixture until smooth. Add the flour mixture and stir gently until well combined. Stir in chocolate chips.
- Place the potato chips on the bottom of the prepared baking pan. Pour the batter over the chips making sure to cover as much as possible. Carefully level the batter.
- Bake for about 25 minutes. You want a moist brownie and it will set nicely as it cools. After 25 minutes remove the pan from the oven and let the brownies cool for at least 1 hour.
- Cut into squares and serve.
