Potato Chip Brownies

  1. Preheat the oven to 350 F. Grease an 8x8 inch baking pan with butter and line it with parchment paper. Set pan aside.
  2. In a medium-sized bowl, sift the flour, cocoa and salt and set aside.
  3. Melt the butter in a large saucepan over a low heat. Once butter is melted add the chopped chocolate bar and stir with a whisk until well combined. Next add the sugars and stir well until combined, heating for about 3 minutes. Remove pan from the heat and let the mixture cool for about 5 minutes.
  4. Whisk the eggs and vanilla into the chocolate mixture until smooth. Add the flour mixture and stir gently until well combined. Stir in chocolate chips.
  5. Place the potato chips on the bottom of the prepared baking pan. Pour the batter over the chips making sure to cover as much as possible. Carefully level the batter.
  6. Bake for about 25 minutes. You want a moist brownie and it will set nicely as it cools. After 25 minutes remove the pan from the oven and let the brownies cool for at least 1 hour.
  7. Cut into squares and serve.
