Apple Cider Baked Donuts
- 2 Tablespoons Sugar
- 2 cups Cake Flour
- 2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1 teaspoon Cinnamon
- 2 Tablespoons Butter, Melted
- 1/3 cups Light Brown Sugar
- 2 whole Eggs Or Egg Substitute
- 1 teaspoon Vanilla Extract
- 1/2 cups Greek Yogurt, Plain
- 1/2 cups Apple Cider
- 1/2 cups Apple, Cored, Peeled, Finely Chopped
- Preheat oven to 400u0b0F. Spray two 24-cup mini muffin tins with baking spray and sprinkle the 2 tablespoons of sugar over muffin cups-just a dash in the bottom of each cup and set aside.
- In a large bowl, whisk together flour, baking soda, salt and cinnamon; set aside.
- In a separate bowl whisk together butter, brown sugar, eggs, vanilla, Greek yogurt and apple cider until smooth. Add mixture to the flour mixture and mix until just combined, but don't over mix.
- Fold in apples.
- Divide batter evenly among muffin cups. Bake for 8-10 minutes or until a toothpick comes out clean (8 minutes worked for me). Serve muffins warm or at room temperature.
