Eggnog Cream Cheese Bars
- 2 cups Gingerbread Cookie Crumbs
- 1/2 cups Butter, Melted
- 8 ounces, weight Cream Cheese, Softened
- 1/2 cups Eggnog (commercial)
- 1 Tablespoon Flour
- 1/2 cups Sugar
- 1 Egg
- 1 Egg Yolk
- 1 teaspoon Rum Extract
- 1/2 teaspoons Nutmeg
- Preheat oven to 350 F. In a medium-sized bowl combine gingerbread crumbs with butter, and mix until all crumbs are moist. Press into the bottom of a 9x13 pan. Bake at 350 F for 10-12 minutes.
- Meanwhile in a large bowl, combine cream cheese, eggnog, flour, and sugar. Add egg and egg yolk, and mix well. Add extract and nutmeg, and mix to incorporate.
- Pour eggnog mixture over the baked crust and return to oven. Bake for an additional 25 minutes, until center is set and not loose when jiggled.
- Allow to cool then cut into 12 large or 24 small bars.
