Christmas Morning Eggnog Muffins

  1. Preheat oven to 350 F. In a small bowl, mix flour, baking powder, salt, nutmeg and cinnamon together. Set aside.
  2. In a mixing bowl, mix Crisco with granulated sugar until blended. Add eggs and mix to combine. Slowly add in flour mixture and eggnog until combined.
  3. Lightly spray two 36-count mini muffin pans with baking spray. Fill muffin cups 1/2 full and bake in a 350 F oven for 13-15 minutes. Remove from oven and allow muffins to cool completely before glazing.
  4. In a medium-sized bowl whisk together eggnog, nutmeg and powdered sugar. Dip tops of muffins into glaze and allow to set (about 15 minutes). Enjoy!
  5. Makes 72 mini muffins.
