Christmas Morning Eggnog Muffins
- FOR THE MUFFINS:
- 3 cups All-purpose Flour
- 1 Tablespoon Baking Powder
- 1 teaspoon Kosher Salt
- 3/4 teaspoons Ground Nutmeg
- 1/2 teaspoons Ground Cinnamon
- 2/3 cups Butter Flavored Crisco
- 1 cup Granulated Sugar
- 2 whole Eggs
- 1 cup Eggnog
- FOR THE GLAZE:
- 1/2 cups Eggnog
- 1/4 teaspoons Ground Nutmeg
- 3 cups Powdered Sugar
- Preheat oven to 350 F. In a small bowl, mix flour, baking powder, salt, nutmeg and cinnamon together. Set aside.
- In a mixing bowl, mix Crisco with granulated sugar until blended. Add eggs and mix to combine. Slowly add in flour mixture and eggnog until combined.
- Lightly spray two 36-count mini muffin pans with baking spray. Fill muffin cups 1/2 full and bake in a 350 F oven for 13-15 minutes. Remove from oven and allow muffins to cool completely before glazing.
- In a medium-sized bowl whisk together eggnog, nutmeg and powdered sugar. Dip tops of muffins into glaze and allow to set (about 15 minutes). Enjoy!
- Makes 72 mini muffins.
