Chocolate Almond Zucchini Bread
- 3 c. flour, sifted
- 1 tsp. cinnamon
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/4 tsp. baking powder
- 2 c. sugar
- 1 c. almonds
- 1 c. vegetable oil
- 1 tsp. vanilla
- 3 eggs
- 2 (1 oz.) sq. unsweetened chocolate, melted
- 2 c. shredded zucchini
- Sift together the first 6 ingredients; set aside.
- To sifted ingredients, add cup of almonds.
- In medium bowl, mix oil, vanilla and eggs until well blended.
- Stir in melted chocolate until well mixed.
- Add zucchini; mix with dry ingredients, stirring just until moistened.
- Pour into greased 9 x 5 x 3-inch pan.
- Bake at 350u0b0 for 1 1/2 hours, or until toothpick comes out clean.
- Cool in pan for 10 minutes.
- Place on rack to finish cooling.
- Makes one large loaf.
