Purple Kale Salad With Pomegranate Vinaigrette
- FOR THE SALAD:
- 1 bunch Purple Kale
- 1 whole Orange, Peeled And Membranes Removed From All Segments
- 1/2 cups Pitted Kalamata Olives
- 2 ounces, weight Feta Cheese
- FOR THE VINAIGRETTE:
- 3 Tablespoons Pomegranate Juice
- 1-1/2 Tablespoon Cider Vinegar
- 1 Tablespoon Honey
- 1/4 teaspoons Salt
- 1 pinch Black Pepper
- 1/4 cups Olive Oil
- Remove the spine from the kale and slice the kale into thin pieces. Toss in a bowl with the rest of the salad ingredients.
- In a small bowl combine all of the vinaigrette ingredients except for the oil. Stir until the honey is dissolved. While stirring add the olive oil. Continue to stir until it's combined (you can do this in the blender as well).
- Toss dressing into the salad and enjoy!
