Zippy Potato Skins
- 6 large baking potatoes
- 1/4 c. butter or margarine
- 2 to 3 tsp. hot pepper sauce
- 1/2 c. shredded Monterey Jack cheese
- 6 slices cooked bacon, crumbled
- Preheat oven to 400u0b0.
- Thoroughly scrub potatoes with brush under cold water.
- Pat them dry.
- Prick each potato with fork. Bake 1 hour or until tender.
- In small bowl, mix together melted butter and hot pepper sauce; set aside.
- Cut each potato in half lengthwise and scoop out pulp using a spoon.
- Leave about 1/4-inch thick shell; reserve potato pulp for other use.
- Cut each potato shell lengthwise into 1-inch wide strips.
- Place potato skin strips on baking sheet.
- Broil the potato skins 3 to 4 inches from heat source for about 5 minutes or until crisp or bake in oven at 450u0b0 for 12 to 15 minutes, until crisp.
- Take out.
- Brush with butter mixture.
- Sprinkle with cheese.
- Put back into oven until cheese melts.
- Then pull out.
- Sprinkle with crumbled bacon.
