Peppermint Thumbprints

  1. Preheat oven to 350u0b0F. In a medium bowl, combine flour, cocoa powder and salt; set aside.
  2. In a large bowl, mix together butter and 1 cup of sugar on medium high until fluffy, about 3 minutes. Add egg and vanilla. Slowly mix in flour mixture and mix until combined.
  3. Place remaining 1/2 cup sugar in a small bowl. Roll dough into 1 in balls and roll in sugar. Place cookie on a lined cookie sheet, about 1 inch apart. Bake for 5 minutes.
  4. Remove from oven and using a rounded teaspoon, lightly make indentation into each cookie. Return to oven for 4 minutes. Top each cookie with a Hershey Kiss and return to oven for 1 minute or until chocolate is slightly melted. Remove and flatten chocolate with a spoon.
  5. Let cookies stand on baking sheet for a minute to set before moving to a cooling rack.
