Domino Cookies
- 14 Tablespoons Butter, Divided
- 1/4 cups White Sugar
- 1/3 cups Unsweetened Baking Cocoa
- 1 teaspoon Vanilla
- 1 whole Egg
- 2 cups Graham Cracker Crumbs
- 1 cup Flaked Coconut
- 1/2 cups Chopped Walnuts Or Pecans
- 3 cups Powdered Sugar
- 3 Tablespoons Vanilla Pudding Mix
- 4-1/2 Tablespoons Milk
- 4 ounces, weight German Sweetened Baking Chocolate
- 1 Tablespoon Shortening
- For the first layer:
- Add 8 tablespoons butter, white sugar, unsweetened baking cocoa, vanilla, egg, graham cracker crumbs, flaked coconut and chopped walnuts to a medium-sized bowl and mix until combined. Firmly press the mixture into the bottom of a 9x13 inch pan and chill in the fridge while you make the the second layer.
- For the second layer:
- Cream the remaining 6 tablespoons softened butter in a bowl with an electric mixer. In a seperate bowl, combine the powdered sugar with the pudding mix.
- Then add 1 tablespoon of milk to the bowl of butter and add 1/4 of the powdered sugar mixture while mixing with the electric mixer. Alternate adding milk and powdered sugar until you have used all the powdered sugar mixture and the milk. Mix with the electric mixer until it's smooth with no lumps. Spread the creamy mixture on top of the first layer as smoothly as possible. Put in the fridge to chill while making the third layer.
- For the third layer:
- Over low heat, melt the German chocolate. Add the shortening and mix it in until the shortening is just melted.
- Note: Spread the 3rd layer as quickly as possible. The chocolate hardens very quickly! Make sure to spread it over the entire surface of the second layer; you don't want any of the second layer to be showing!
- Place the baking dish back into the fridge to chill for 1 to 2 hours. Cut the cookies into domino-sized rectangles and keep them in the fridge until you are about to serve/eat them. Enjoy!
