Broccoli And Orange Salad
- FOR THE SALAD:
- 1 head Broccoli
- 1 whole Orange
- 1 whole Small Purple Onion, Sliced In Rings
- 1-7/8 ounces, weight Ground Walnuts

- FOR THE DRESSING:
- 1/2 whole Orange, Juiced
- 1 teaspoon Balsamic Or Apple Vinegar
- 2 Tablespoons Olive Oil
- 2 teaspoons Soy Souce
- 1 teaspoon Ground Coriander
- 1/4 teaspoons Ground Black Pepper
- In a large bowl, cut or tear washed broccoli into small pieces. Peel one orange, divide it into pieces and as much as possible remove the white membrane. Cut into small pieces and add it to the broccoli.
- In a small bowl, mix the dressing ingredients (orange juice, vinegar, olive oil, soy sauce, coriander, black pepper). Stir well. Pour over broccoli and orange pieces, stir well, cover the bowl with foil and leave in the refrigerator for 30 minutes.
- Before serving, slice onion into thin rings. Pour some salad into a shallow dish, sprinkle with walnuts and onions.
