Crunchy Vanilla, Cinnamon, And Cranberry Granola Bars
- 1-1/2 cup Oats
- 1 whole Egg
- 1 whole Egg White
- 1 cup Packed Light Brown Sugar
- 1 Tablespoon Canola Oil
- 1 teaspoon Ground Cinnamon
- 1/4 teaspoons Salt
- 1 teaspoon Vanilla Extract
- 2/3 cups Dried Cranberries
- 1 Tablespoon All-purpose Flour
- Preheat oven to 325 degrees F. Line an 8x11 pan with foil and grease with cooking spray.
- Toast the oats on a baking sheet in a thin layer for 6-8 minutes.
- In a large bowl, whisk together the egg, egg white, brown sugar, oil, cinnamon, salt, and vanilla extract. Add in toasted oats, dried cranberries, and flour.
- Spread into the prepared pan evenly and all the way to the edges. Bake until golden brown (about 30 minutes). Then, remove and let cool.
- Once it has cooled, cut into bars using a lightly oiled knife.
- I even used the leftover crumbles as a granola cereal.
