Kahlua Chocolate Peanut Butter Fudge

  1. Spray an 8x8 pan with non-stick spray. Set aside.
  2. Add semi-sweet chocolate to the top of a double boiler (with water simmering in the bottom) and melt completely. Once melted, remove the bowl of melted chocolate from heat. Slowly add in sweetened condensed milk, salt and vanilla extract, stirring with a large spatula until mixed. The chocolate will be thick. Begin to stir in the Kahlua 1 tablespoon at a time. The mixture is going to get super thick but slowly stir and just fold the chocolate mixture over until combined. Use the spatula or a large spoon to spread the chocolate into the pan. It will be very thick but just try and spread as evenly can. Do not worry too much about it though. Place it in the fridge for 10 minutes to set.
  3. Melt the dark chocolate in the clean bowl of your double boiler, using the same method as above.
  4. Remove the pan of fudge from the fridge. Pour the dark chocolate over the fudge. Using the back of a spoon, spread it evenly over the top of the fudge. Immediately cover it with the chopped peanuts and chopped milk chocolate.
  5. Melt the peanut butter chips in the clean bowl of your double boiler using the same method as above. Then drizzle it over the top to set some of the loose chocolate and peanuts.
  6. Let it set up in the fridge for 30 minutes or so. Use a sharp knife to cut fudge into your desired size of squares.
