Cucumber Pickles

  1. Remove skin
  2. and
  3. seeds
  4. from large cucumbers, cut into chunks.
  5. Combine
  6. water
  7. and
  8. lime,
  9. soak
  10. cucumbers
  11. in
  12. lime solution for
  13. 24
  14. hours, using an enamel or glass or stainless steel container.
  15. Rinse cucumbers well, soak 3 hours longer in clear water.
  16. Drain.
  17. Combine
  18. sugar,
  19. vinegar,
  20. salt and food coloring.
  21. Heat totake a syrup.
  22. Put spices in cloth bag and tie bag securely.
  23. Place bag in syrup mixture.toak cucumbers in syrup mixture overnight.
  24. The next day, boil for 35 minutes to an hour
  25. or until cucumbers are clear and tender.
  26. Place in hot sterilizedtars
  27. and
  28. seal.
  29. Yields
  30. about
  31. 12
  32. pints
  33. (6 quarts).
