Oatmeal Cinnamon Raisin Cookies

  1. Preheat oven to 350 F.
  2. In a large bowl using a mixer, beat butter and sugars until creamy. Add eggs and vanilla, beat well. Add flour and baking soda, and mix to combine. Then use a rubber spatula to fold in the oats, cinnamon chips and raisins.
  3. Drop dough by heaping spoonfuls onto an un-greased cookie sheet. Bake 10 minutes or until slightly browned. Do not overbake! Remove the pan from the oven. Allow cookies to cool on the pan for 1 minute then move them to a cooling rack. Store in airtight containers.
  4. In a pinch for time? These can also be made into bar cookies! Just spread the batter onto a lightly greased 9x13 pan and bake for 25 minutes at 350 F, or until golden brown.
  5. Makes 3 dozen cookies.
  6. So good!
