Oatmeal Cinnamon Raisin Cookies
- 2 sticks Butter
- 1 cup Packed Brown Sugar
- 1/3 cups Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 1-1/2 cup Flour
- 1 teaspoon Baking Soda
- 2-1/2 cups Quick Cooking Oats
- 10 ounces, weight Cinnamon Chips
- 3/4 cups Raisins {I Did A Bit More!}
- Preheat oven to 350 F.
- In a large bowl using a mixer, beat butter and sugars until creamy. Add eggs and vanilla, beat well. Add flour and baking soda, and mix to combine. Then use a rubber spatula to fold in the oats, cinnamon chips and raisins.
- Drop dough by heaping spoonfuls onto an un-greased cookie sheet. Bake 10 minutes or until slightly browned. Do not overbake! Remove the pan from the oven. Allow cookies to cool on the pan for 1 minute then move them to a cooling rack. Store in airtight containers.
- In a pinch for time? These can also be made into bar cookies! Just spread the batter onto a lightly greased 9x13 pan and bake for 25 minutes at 350 F, or until golden brown.
- Makes 3 dozen cookies.
