Pork Brine
- 5 cups Ice Water Plus 1 Tray Of Icecubes
- 3 cups Apple Cider
- 1/2 cups Brown Sugar
- 2 Tablespoons Cider Vinegar
- 2 Tablespoons Maple Syrup
- 1 Tablespoon Cinnamon
- 1/4 cups Salt
- 4 sprigs Fresh Thyme
- 1 whole Bay Leaf
- 1 Tablespoon Black Peppercorns
- 1 Tablespoon Corriander Seeds
- 1 whole Orange, Just The Rind
- Place water in a large bowl that has a lid.
- Place all ingredients in a large saucepan and bring to a boil (the smell will be amazing). Once it has boiled, pour the mixture into the bowl with water, and then add ice cubes and whichever cut of pork you are using. Cover tightly with lid and place in fridge for 3 hours but no more than 8.
- Remove the meat from the brine and prepare the pork using your favorite cooking method (grilled, baked, etc) and your favorite recipe.
