Banana And Nutella Muffins
- 1/4 cups Olive Oil (or Oil Of Choice)
- 1/2 cups Sugar
- 1 whole Egg
- 2 whole Very Ripe Bananas, Peeled And Mashed
- 1 cup Whole Wheat Flour
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 3 Tablespoons Milk
- 1/2 teaspoons Vanilla Extract
- Topping
- 12 Tablespoons Nutella
- 1.Preheat your oven to 350 F and spray a 12-count muffin tin with non-stick spray (recipe makes 9 muffins).
- 2. In a large mixing bowl, beat together your olive oil and sugar. Once combined, mix in your egg and bananas. Then add your dry ingredients (flour through salt, preferably pre-sifted together) and mix them in. Then add your milk and vanilla and mix well with a whisk or hand mixer.
- 3. Spoon batter into your muffin tins and bake for 20-25 minutes or until an inserted toothpick comes out clean. Then remove them from the oven and allow them to cool in the pan.
- 4. Once the muffins are slightly cooled top them with 1 tablespoon Nutella each and enjoy with a cup of coffee or tea.
