Oatmeal Date Muffins
- 1 cup Flour
- 1/2 cups Brown Sugar
- 1-1/2 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 1/2 teaspoons Cinnamon
- 1/8 teaspoons Cardamom
- 1 cup Oats
- 1 cup Dates, Chopped
- 6 Tablespoons Butter, Melted
- 1 cup Milk
- 1/2 teaspoons Vanilla Extract
- 1 whole Egg
- Preheat the oven to 400 degrees and grease a muffin pan. In a medium bowl, whisk together the flour, sugar, baking powder, salt, spices, oats, and dates. In a smaller bowl, mix together the butter, milk, vanilla extract, and egg. Stir the dry ingredients into the wet ingredients and mix just until incorporated.
- Spoon the batter into the muffin pan. Bake about 20 minutes, and then remove them to a wire rack to cool completely. Serve warm.
