Granola Cookie Cupcakes
- 12 whole Cupcakes, Batter For (use Your Favorite Recipe Or A Box Mix)
- 12 whole Small Round Cookies (that Will Fit In The Bottom Of A Cupcake Liner)
- 6 whole Granola Bars/Clusters
- 3 Tablespoons Cocoa Powder
- 2 Tablespoons Margarine
- 1 cup Icing Sugar
- 2 Tablespoons Milk
- 1/4 teaspoons Vanilla
- 1. Preheat oven according to directions for your cupcakes. Prepare cupcake batter. Line a cupcake tray with paper liners. Place one cookie at the bottom of each liner. Fill liners to 1/2 or 2/3 mark with cupcake batter and bake as long as recipe requires (usually around 15-20 minutes).
- 2. When done remove the pan from the oven and let cupcakes cool fully. Using a small knife (I like to use an upside down, medium-sized icing tip) cut a hole in the top center of the cupcakes. Pull apart a granola cluster and put it into the hole. Don't press it in too tight. Use the very top of the cut-out part to close the cupcake top again.
- 3. For the chocolate glaze, melt cocoa powder and margarine in a small saucepan on medium heat. Once melted, set aside to cool. In a bowl stir together icing sugar, milk and vanilla. Mix in the cocoa mixture. Dip the top of the cupcakes in glaze or spoon glaze over the cupcakes. Sprinkle with a few remaining granola bits.
