Cinnamon And Raisin Granola Cookies
- 1/2 cups Unsweetened Applesauce
- 2 Tablespoons Maple Syrup, Sugar Free
- 1 teaspoon Vanilla Extract
- 1 cup Gluten-free Oats, Ground
- 1/2 cups Gluten Free Oats
- 1/2 teaspoons Cinnamon
- 1/4 teaspoons Baking Soda
- 1/4 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 1/3 cups Raisins
- Preheat oven to 350u0b0F. Line baking sheet with parchment paper or Silpat; set aside.
- In a large bowl add applesauce, maple syrup and vanilla extract. Mix until combined. Add oat flour, oats, cinnamon, baking soda, baking powder and salt; mix until combined.
- Fold in raisins.
- Take a heaping tablespoonful of batter (I used a large cookie scoop) and place on cookie sheet, about 1 1/2" apart. The cookies do not spread. I carefully flattened the top of the cookies with a back of a spoon, but it is not necessary.
- Bake for 10-12 minutes or until bottom is lightly golden.
