Lemon Chia Seed Mini Muffins

  1. Preheat oven to 350u0b0F.
  2. In a large mixing bowl, use a handheld mixer to combine butter and sugar. Mix in yogurt, eggs, and vanilla, then finally lemon zest and juice.
  3. In a smaller mixing bowl, combine flour, baking powder, and baking soda. Use a whisk to gently mix dry ingredients into wet. Add chia seeds and mix until just combined (do not over mix).
  4. Spoon batter into greased mini muffin tins, filling each cup 3/4 full. Bake for 10-12 minutes.
  5. Remove from oven and allow to cool prior to storage in an airtight container.
