Funfetti Sugar Cookie
- 1 container Candy Sprinkles, 1 Ounce Size
- 1-3/4 cup Funfetti Cake Mix
- 1/4 cups All Purpose Flour, Plus Extra For Handling Dough
- 6 Tablespoons Butter, Slightly Chilled
- 1/2 cups Sugar
- 2 Eggs
- 1/2 teaspoons Vanilla
- 1. Preheat oven to 350 F and prepare 2 cookie sheets by covering them with parchment paper.
- 2. Prepare a small shallow bowl with sprinkles, using as many as you like.
- 3. In small bowl whisk together cake mix and 1/4 cup flour. Set aside.
- 4. In the bowl of your stand mixer using the paddle attachment beat butter and sugar till blended together.
- 5. Add one egg at a time and beat well each time. Then add vanilla.
- 6. Slowly incorporate the flour mixture into the creamed mixture.
- 7. Stir in as many sprinkles as you like (not the ones from the bowl).
- 8. Dough will be sticky so you will need to sprinkle the dough and your hands with flour before rolling the cookies.
- 9. Roll dough into your desired size of balls. Then roll balls into sprinkles.
- 10. Place balls on cookie sheets with about 2 inches between each. Bake for 11-12 minutes or until lightly browned.
- 11. Cool and enjoy!
