Pea Sprouts With Salted Fish
- 1 piece Salted Fish, Approximately 1 Inch Size (ikan Masin Kurau Or Salted Threadfin), Sliced Thinly
- 2 Tablespoons Vegetable Oil
- 4 slices Ginger (thin Slices From A Ginger Root)
- 1 whole Small Carrot, Cut Into Matchsticks
- 1 clove Garlic, Minced
- 1 Tablespoon Sambal Oelek (or Hot Chili Sauce)
- 1 Tablespoon Oyster Sauce
- 1 teaspoon Fish Sauce
- 1/2 pounds Pea Sprouts, Rinsed Thoroughly
- In a pan on medium high heat, fry salted fish slices in the vegetable oil until browned and crisp. Remove them from the pan and set aside.
- Fry ginger slices in the same pan until fragrant, 1 minute. Then add carrot and garlic. Saute until carrot has softened slightly.
- Pour in chili sauce, oyster sauce and fish sauce and mix everything well. Scatter in pea sprouts. Stir to mix thoroughly for about 1 minute. Pea sprouts will have wilted slightly.
- Dish out immediately and sprinkle the crispy salted fish bits over the top.
- *If you don't have pea sprouts, you can use any form of bean sprouts you can find. As for the salted fish, anchovies or even fish sauce would give very similar flavours. Finally for the sambal, you can sub it with your favourite hot sauce, hot pepper flakes or omit altogether.
