Spicy Cucumber Salad
- 3 whole Seedless Cucumbers
- 1 Tablespoon Salt
- 3 whole Green Onions
- 1 whole Jalapeno
- 1/2 cups Cilantro
- 1/4 cups Peanuts
- 3 Tablespoons Sugar
- 3 Tablespoons Rice Vinegar
- 1. Peel cucumbers, slice in half, then into 1/4 inch slices.
- 2. Place cucumber slices in a colander, toss with the salt and let sit for 30 minutes. Rinse and pat dry. Transfer cucumber slices to a large bowl.
- 3. While cucumbers are sitting, chop up the green onions, jalapeno, cilantro and peanuts. De-seed the jalapeno if you want a milder salad.
- 4. Add sliced green onions, chopped jalapeno and cilantro to the cucumbers.
- 5. Whisk together sugar and vinegar. Pour over the salad and toss it all together.
- 6. Serve with chopped peanuts sprinkled over the top.
- Salad can be made ahead and chilled. If making ahead, wait to sprinkle peanuts on top until just before serving.
