Molasses Spice Cookies
- 1/2 cups Butter, Softened
- 1/2 cups Lard
- 1-1/2 cup Sugar Plus Extra For Coating Cookies
- 1/2 cups Unsulfured Molasses
- 2 whole Large Eggs, Lightly Beaten
- 2 cups (8 Ounces) Whole Wheat Pastry Flour
- 2 cups All-purpose Flour
- 1 teaspoon Salt
- 2-1/4 teaspoons Baking Soda
- 2-1/4 teaspoons Ground Ginger
- 1-1/2 teaspoon Ground Cloves
- 1-1/2 teaspoon Ground Cinnamon
- 1. In the bowl of a stand mixer, cream the butter, shortening, and sugar. Beat in the molasses and eggs.
- 2. In a medium bowl, whisk together the dry ingredients. Add the dry ingredients to the butter mixture and blend until smooth. Place in the refrigerator for about 1 hour (it took less time for us) or until the dough is easy to handle.
- 3. Preheat oven to 350u0b0 F. Lightly grease or line a baking sheet with parchment paper.
- 4. Fill a small, shallow bowl with sugar. Roll the dough into golf ball-sized balls. Roll in sugar and place on prepared cookie sheet 2 inches apart.
- 5. Bake in the preheated oven for about 13 minutes. Do not overcook. They will still be soft and only slightly darker. Remove to a wire rack to cool completely. Store in an airtight container.
