Mom’S Most Awesome Bean Salad
- FOR THE SALAD:
- 1-1/2 cup Canned Green Beans
- 1-1/2 cup Canned Yellow Beans
- 2 cups Canned Kidney Beans
- 2 cups Canned Chickpeas
- 1/2 whole Onion, Diced
- 1 cup Celery, Chopped
- 1/2 cups Red Pepper, Diced
- 1 cup Whole Green Manzanilla Olives
- FOR THE DRESSING:
- 3/4 cups White Sugar
- 3/4 cups White Or Cider Vinegar
- 1/2 cups Vegetable Oil
- 1 teaspoon Salt
- 1/4 teaspoons Black Pepper
- 1 Tablespoon Fresh Chopped Dill Or 1 Teaspoon Dried
- Place all of the veggies and beans in a bowl.
- In a Mason jar or small bowl, mix the dressing and pour on top of the veggies. Stir and leave in the fridge for at least 24 hours. Best served on the third day, making it a great make-ahead side dish!
