Feta, Tomato & Green Onion Muffins
- 1 cup All-purpose Flour
- 1 cup Wheat Flour
- 1 teaspoon Salt
- 1 Tablespoon Baking Powder
- 3 whole Large Eggs, Lightly Beaten
- 1/2 cups Half-and-half
- 1-1/2 stick Butter, Roughly Chopped
- 1 can (14 1/2 Oz. Size) Diced Tomatoes, Diced And Rinsed
- 1 ounce, weight Crumbled Feta Cheese
- 4 whole Green Onions, Chopped
- Preheat oven to 400 F and line a 12-count muffin tin with liners.
- In a large bowl whisk together flours, salt, and baking powder. Set aside.
- In a separate bowl, combine eggs and half-and-half.
- Add butter to the flour mixture and using an electric mixer, mix until just combined, about 1-2 minutes.
- Mix in the egg mixture until combined then pour in the tomatoes, cheese, and green onions. Mix well and then pour even amounts into each of the muffin liners.
- Bake until puffy and golden, about 15-20 minutes.
