Turkey Meat Balls With Rice Or Egg Noodles
- 1 egg
- 1 lb. ground turkey
- 1 1/4 c. fresh bread crumbs (2 slices)
- 1/2 c. finely chopped onion
- 1 large clove garlic, finely chopped
- 1 tsp. crumbled leaf tarragon
- 1 1/4 tsp. salt
- 1/2 tsp. pepper
- 3/4 tsp. grated lemon rind
- 4 Tbsp. vegetable oil
- 1/2 lb. mushrooms, thinly sliced
- 1 c. chicken broth
- 3 Tbsp. lemon juice
- Combine egg, turkey, crumbs, onion, garlic, 1/2 teaspoon tarragon, 3/4 teaspoon salt, lemon rind and 1/4 teaspoon pepper. With tablespoon, shape into 40 balls.
- Brown half of meat balls in 2 1/2 tablespoons oil in large skillet 6 minutes.
- Remove to platter.
- Brown remainder.
- Saute mushrooms in remaining oil in skillet 2 minutes; add to meat balls.
- Add broth, lemon juice, rest of tarragon, salt and pepper to skillet.
- Boil 1 or 2 minutes.
- Return meat balls and mushrooms to skillet.
- Serve over rice or noodles.
- Add package turkey gravy (optional).
