Turkey Meat Balls With Rice Or Egg Noodles

  1. Combine egg, turkey, crumbs, onion, garlic, 1/2 teaspoon tarragon, 3/4 teaspoon salt, lemon rind and 1/4 teaspoon pepper. With tablespoon, shape into 40 balls.
  2. Brown half of meat balls in 2 1/2 tablespoons oil in large skillet 6 minutes.
  3. Remove to platter.
  4. Brown remainder.
  5. Saute mushrooms in remaining oil in skillet 2 minutes; add to meat balls.
  6. Add broth, lemon juice, rest of tarragon, salt and pepper to skillet.
  7. Boil 1 or 2 minutes.
  8. Return meat balls and mushrooms to skillet.
  9. Serve over rice or noodles.
  10. Add package turkey gravy (optional).
