Strawberry Fluff
- 1 pkg. frozen sweetened strawberries
- 1/3 c. sugar
- 1/4 tsp. red food coloring
- 3 Tbsp. lemon juice
- 1 Tbsp. water
- 1 envelope unflavored gelatin
- 2/3 c. evaporated milk, chilled icy cold
- Thaw strawberries.
- Add sugar and stir until dissolved.
- Stir in food coloring.
- Put lemon juice and water in a custard cup and sprinkle gelatin over top.
- Let sit about 5 minutes to soften. Place custard cup in a small saucepan, surround with a small amount of water and then heat over low heat until gelatin is dissolved.
- Blend gelatin into strawberries.
- Chill until mixture begins to thicken, then whip the chilled evaporated milk until it is stiff and will hold a peak.
- Fold in gelatin mixture lightly but thoroughly.
- If necessary, chill until mixture mounds when dropped from spoon.
- Pile lightly into 4 cups.
- Chill until set.
