Breakfast Casserole
- 6 to 8 eggs
- 1 c. milk
- 1 tsp. prepared mustard
- 1 lb. sausage, cooked
- 1 c. sharp Cheddar cheese, grated
- 3 to 4 slices bread, cubed
- 3 stalks celery
- 2 yellow onions
- 2 bell peppers
- 4 fresh jalapenos
- 6 cloves garlic
- 2 sticks margarine
- 1/4 c. olive oil
- 2 cans Cajun stewed tomatoes
- 2 cans Ro-Tel tomatoes
- 2 Tbsp. Worcestershire sauce
- 1 tsp. red pepper
- 1 or 2 Tbsp. Tabasco sauce
- meat or fish (1 fillet per person), beef or chicken
- 4 Tbsp. lemon juice
- rice
- Dice first 5 ingredients very fine.
- Saute in margarine and olive oil until onions are clear looking, on low temperature, about 2 hours.
- Add stewed tomatoes and Ro-Tel tomatoes.
- Let boil on low heat about 2 hours.
- Add Worcestershire sauce, red pepper and Tabasco sauce.
- Stir often for two or more hours.
