Pretty Pomegranate Ice Cream

  1. 1. Measure out 1 1/2 c. powdered sugar into a large bowl.
  2. 2. Pour pomegranate juice into the powdered sugar, mix with a whisk.
  3. 3. Add the lime juice.
  4. 4. Pour in the heavy cream. This is so pretty! Mix it up with your whisk a little.
  5. 5. Blend until soft peaks form (stand mixers are perfect for this but any handheld blender will do).
  6. 6. Pour it in a container that will fit in your freezer. (I recommend any plastic tupperware with a lid. Don't do what I did and use a metal loaf tin!)
  7. 7. Cover with plastic wrap, sealing out as much air as you can, then secure with a rubber band or lid and place in the freezer for at least 7 hours (preferably overnight).
  8. 8. Serve in cute cocktail glasses with mint sprigs as a garnish, and enjoy!
